In the Kitchen – Mash-up.
This is not going to be my typical “In the Kitchen” post. I did cook some this week – but I just simply forgot to take pictures. Of food.
Because lord knows I got pictures of my cats this week.
Including this little gem of Mosa and Neko.
They have been best buds while sitting on the futon lately. It’s so sweet, yet so peculiar.
More on this later though. I have video.
Anyways, I have been recovering from being sick last week – so this week in the kitchen was sort of low key. But I still did make a few things – both from How Sweet It Is.
On Sunday, I made the site’s Crockpot Cheddar Beer Chicken Tacos. Very, very good. And very, very simple. As are most crockpot dishes – it’s just dump stuff in the pot and let it simmer away. My kind of Sunday meal. The toppings included: shredded cheese (colby and cheddar), tomatoes, lettuce, avocado, jalapenos, black beans and salsa. Yum! We brought these up to our friends’ house to watch the last three episodes of American Horror Story. Television’s guilty pleasures at its finest. The way season 1 ended was quite good – and we are all so intrigued for next season. Apparently, each season is going to be about a different cast at a completely different location. At first it was going to be all in the same house – but now they have even changed that. So it’s kind of like a long movie in one season. And so creepy!! I love Connie Britton though from Friday Night Lights (love that show!), so I will be sad to see her go. Le sigh.
TV tangent. Sorry about that.
Monday we had taco leftovers – but Tuesday I actually cooked again. I started to make Gnocchi in a Balsamic Reduction - but then there was a snafu. I was trying out some wholewheat gnocchi from Trader Joe’s. I don’t know what it was – if I didn’t cook them correctly, if they were bad or if I just don’t like the healthier version of gnocchi – but then when I tasted them plain – I did not like them! Luckily – I had a back-up plan. One way that we have adapted this recipe is using Mrs T’s Pierogies instead of the gnocchi, which may sound weird – but man does it taste good. I had a box in our freezer, so I just quickly cooked the pierogies up and our dinner was saved. Phew! Add a little side salad and my croutons and you have a complete meal!
No worries on this week’s slacking though – next week I will make up for it. Promise. This weekend, my husband and I are having our 2nd Annual February Thanksgiving. Ergo, I will have tons of recipes and food pics to share with you!
